Once dismissed as a humble roadside weed, it has now emerged as a source of livelihood, nutrition, and heritage. In Mandi, women like Ramma Ji have taken the lead in cultivating Yelo, ensuring its year-round availability. She sells its seeds at Choutha Bazaar, where the demand remains steady at around Rs. 200 per kilogram. Dried Yelo seeds are lightly roasted, ground into a coarse powder, and saut\u00e9ed in mustard oil with turmeric. Gapgal (Himalayan lemon) juice, jaggery, and dates are added and simmered until thick, creating a perfect balance of tang and sweetness. A roasted spice blend of fenugreek, cumin, and red chilies is then mixed in, and the preparation is left to mature for two weeks, deepening its flavor. Stored in airtight containers, it keeps for 2\u20133 years and is traditionally savored with steamed rice, Siddu, kachuri, flatbreads, or as a versatile condiment that brightens any meal.<\/p>\n<p>Beyond chutney, roasted Yelo seeds also serve as a nutty, caffeine-free coffee substitute\u2014an aromatic, earthy beverage with natural sweetness. Every 100 grams provide about 370 kcal, 62 g of carbohydrates, 18.6 g of protein, 2.6 g of fat, and 8.4 g of fiber, along with calcium, iron, potassium, magnesium, zinc, and copper in significant amounts. They are also rich in vitamins\u2014Vitamin A for eye health, Vitamin C for immunity, Vitamin E for skin protection, and B-complex with folate for energy and nerve function. This blend of nutrients makes Yelo both a functional food and a traditional remedy. In folk medicine, its leaves are used for skin diseases, itching, boils, and inflammation; seeds are valued for improving eyesight, managing liver disorders, and easing kidney stones; while its roots are used as mild laxatives and blood purifiers.<\/p>\n<p>Despite its value, natural populations of Yelo have declined in recent years due to climate stress and overexploitation. The shift from wild gathering to cultivation, led by rural women, is therefore a remarkable step towards climate-resilient development.
